Butternut "Meat" Portion
- Butternut Squash, peeled and diced
- 1-2 Tbsp Avocado Oil
- 1/2 freshly squeezed lime
- Finely chopped, jalapeño (optional)
- 1 tsp Taco Seasoning
1 can organic black beans
1 pack of Ezekiel Sprouted Grain Tortillas (freezer section)
Cilantro
Avocado Drizzle
- 1-2 Avocado
- 1 Cup of Siggis Plain Yogurt (or Greek Yogurt)
- Finely chopped, jalapeño (optional)
- 1 Tsp Cilantro
- 1-2 Tbsp fresh lime juice
- Dash of sea salt and freshly ground pepper
- 1 Tbsp reserved Pico De Gallo
- 1 Tsp of Water (if needed)
Pico De Gallo
- 2-3 cups tomatoes, chopped
- 1/2 onion, finely chopped
- 1 jalapeño,finely chopped
- 1/5 cup fresh cilantro, finely chopped
- 1/2 freshly squeezed lime juice
- Dash of Sea Salt and Pepper
Instructions:
- Preheat oven to 400 degrees F (204 degrees C).
- Add diced squash to a bare baking sheet (1 large or 2 small, depending on size of squash) and toss with oil, taco seasoning, diced jalapeño (optional) and lime juice, then arrange in a single layer.
- Bake for 20-25 minutes, flipping once at the halfway point to ensure even baking. You’ll know it's done when fork tender, golden brown, and slightly caramelized.
- Combine the pico de gallo ingredients ahead so it has time to marinate. Chop and combine all the pico de gallo ingredients, stir together, put in air tight container, store in refrigerator until ready to serve.
- For the avocado drizzle, combine all the ingredients listed for the dressing in a high powered blender and blend until it has a drizzle/dressing like consistency. If it seems too thick just add a dash of water and blend more until you reach the dressing consistency. Place dressing in air tight container and store in refrigerator until ready to serve.
- Heat black beans in sauce pan over the stove until well heated and pop tortilla in warm oven on baking sheet for 2-3 minutes to slightly warm. Plate the warm tortilla, add cooked butternut squash chunk serving, add cooked black bean serving, add pico de gallo serving, and drizzle with avocado dressing!
